Ingredients
- 2-3 (8 ounce) packages brown rice ramen noodles
- 6 tablespoons salted butter
- 4 cloves garlic, minced or grated
- 2 teaspoons ginger, fresh grated
- 2 small or 1 medium zucchini, grated
- 1/4 cup low sodium soy sauce
- 1/2 cup fresh basil, plus more for serving, roughly chopped
- toasted sesame seeds, optional, for serving
- 4 soft boiled or fried eggs, optional
Directions
Step 1 –Bring a large pot of water to a boil.
Step 2 –Cook the ramen noodles according to package directions.
Step 3 –Drain the noodles.
Step 4 –Heat a large skillet over medium-high heat.
Step 5 –Add the butter and garlic and cook until the garlic is golden and caramelized, about 2-3 minutes.
Step 6 –Stir in the ginger, cooking for 1 minute.
Step 7 –Stir in the zucchini, and cook until the zucchini wilts into the butter, about 2-3 minutes.
Step 8 –Stir in the ramen noodles, soy sauce, and basil, gently tossing to combine.
Step 9 –Remove the skillet from the heat.
