3 Pepper Corn Bake is an exceptionally flavorful way to add some pizzazz to your next meal. Ingredients
For the corn bake:
- 2 tablespoons unsalted butter, softened, plus more, to taste, for greasing the pan, plus 6 tablespoons, melted and cooled, divided
- 1 1/2 cups yellow onion, chopped
- 1 cup green bell pepper, chopped
- 1 tablespoon garlic, minced
- 1 tablespoon chipotle in adobo, minced with liquid
- 1 1/2 teaspoons coarse salt, plus more, to taste
- freshly ground black pepper, to taste
- 4 cups frozen organic corn kernels, thawed, divided
- 1/4 cup fine cornmeal
- 2 cups pepper jack cheese, shredded
- 1/2 cup heavy cream
- 6 large eggs
Optional, for serving:
- salsa, to taste, store-bought or homemade
- cilantro sprigs, to taste
- sour cream, to taste
Directions
Step 1 –Preheat the oven to 350 degrees F.
Step 2 –Using the extra softened butter, grease an 8-inch square baking dish.
Step 3 –In a medium skillet over medium-high heat, melt the 2 tablespoons of the softened butter.
Step 4 –Add the onion and the green bell pepper to the skillet and cook, stirring often, until golden-brown and caramelized, about 8 minutes.
Step 5 –Add the garlic to the onion mixture and cook, stirring frequently, until fragrant, about 1 minute.
Step 6 –Add the chipotle pepper and the adobo liquid, the extra salt, and the black pepper to the onion mixture and stir to combine.
Step 7 –Transfer the onion mixture from the skillet to a large bowl and let it cool to room temperature.
Step 8 –In a food processor, add 3 cups of the corn kernels and purée until very smooth.
Step 9 –Add the puréed corn, 1 1/2 teaspoons of the salt, the cornmeal, the remaining corn kernels, and the pepper jack cheese to the onion mixture and stir to combine.
Step 10 –In a separate large bowl, add the remaining 6 tablespoons of the melted butter, the heavy cream, and the eggs and whisk just until combined.
Step 11 –Fold the egg mixture into the corn mixture.
Step 12 –Add the batter evenly into the prepared baking dish.
Step 13 –Bake until puffed, golden, and the center jiggles slightly, about 45-50 minutes.
Step 14 –Transfer the bake from the oven to a wire rack and let it cool, about 15 minutes.
Step 15 –Serve with your favorite optional toppings!
