- 4 quarts water
- 1 teaspoon salt, divided
- 1 (16-ounce) box elbow macaroni or cavatappi noodles
- 1 cup heavy cream
- 6 ounces cheddar cheese, shredded
- 3/4 cup parmesan cheese, shredded
- 1/2 teaspoon pepper
Directions
Step 1 –In a large pot bring the water to a boil.
Step 2 –Season the water with 1/2 of the salt.
Step 3 –Cook the pasta in boiling water according to the package instructions until al dente.
Step 4 –While the pasta is cooking, heat the cream in a heavy saucepan or cast-iron skillet over medium heat until the cream begins to bubble.
Step 5 –Add the cheddar, the parmesan cheese, the remaining salt, and the pepper.
Step 6 –Stir the cheese sauce until bubbly and the cheese has melted, about 5-7 minutes while stirring often.
