Ingredients

  • 1 1/2-2 pounds ground beef
  • 1 (10.5-ounce) can condensed cream of mushroom soup
  • 1 (10.5-ounce) can cream of cheddar cheese soup
  • 3 cups frozen cubed potatoes
  • 1 cup cheddar cheese, shredded, divided
  • salt, to taste
  • pepper, to taste
  • chives, optional, to taste, for garnish

Directions

Step 1 –Preheat the oven to 350 degrees F.

Step 2 –Grease a 9×13-inch casserole dish.

Step 3 –In a large skillet over medium-high heat, cook the ground beef until browned, about 5-7 minutes. Drain the excess grease from the skillet.

Step 4 –Add the beef to a large mixing bowl.

Step 5 –Add the cream of mushroom soup, the cream of cheddar soup, the potatoes, 1/2 cup of the shredded cheese, the salt, and the pepper to the bowl and mix until combined.

Step 6 –Pour the ground beef mixture into the prepared casserole dish.

Step 7 –Sprinkle the remaining shredded cheese on top.

Step 8 –Cover the casserole dish with foil and bake for 30 minutes.

Step 9 –Remove the foil and bake until the cheese is golden-brown, about 30 minutes.

Step 10 –Garnish with the chives and serve hot.
