Think of your favorite sweet and rich vanilla pound cake, but even lighter and fluffier! And then imagine it drizzled with a zesty, sugary glaze derived from the classic citrus soda. That’s a 7-Up Pound Cake. Put your trust in the pop.
Ingredients
For the cake:
- 1 1/2 cups butter, softened
- 3 cups sugar
- 5 large eggs, room temperature
- 2 tablespoons lemon juice
- 1 teaspoon vanilla extract
- 3 cups all-purpose flour
- 3/4 cup 7-Up soda, or similar lemon-lime soda
For the glaze:
- 1 1/2 cups confectioners’ sugar
- 1 tablespoon lemon or lime juice
- 1-2 tablespoons 7-Up soda
- 1/2 teaspoon grated lemon, or lime zest, optional
Directions
Step 1 –Preheat the oven to 350 degrees F.
Step 2 –Grease and flour a 10-inch fluted or plain tube pan.
Step 3 –In a large bowl, cream the butter and sugar with a hand mixer until light and fluffy, about 5-7 minutes.
Step 4 –Add the eggs, one at a time, to the butter mixture, beating well after each addition.
Step 5 –Beat the lemon juice and vanilla into the butter mixture.
Step 6 –Alternate adding the flour and the 3/4 cup 7-Up to the butter mixture, about 1/3 of each at a time, beating well after each addition.
Step 7 –Transfer the batter to the prepared pan.
Step 8 –Bake the cake until a toothpick inserted in the center comes out clean, about 1 hour 5 minutes-1 hour 15 minutes.
Step 9 –Take the cake out of the oven and cool in the pan for 20 minutes.
Step 10 –After 20 minutes, transfer the cake from the pan to a wire rack to cool completely.
Step 11 –In a small bowl, mix the confectioners’ sugar, lemon juice, and the remaining 7-Up until it reaches the preferred consistency.
Step 12 –Stir in the zest.
Step 13 –Drizzle the glaze over the cake once the cake is completely cooled.
Step 14 –Slice and serve!
