Ingredients
- 4 chicken breasts
- 1 teaspoon salt
- 2 cloves garlic, minced
- 1/4 cup pesto
- 4 tablespoons cream cheese
- 3/4 cup mozzarella cheese, shredded
- 1/2 cup sundried tomatoes
- 1/2 cup spinach, roughly chopped
- 2 tablespoons olive oil
- 2 tablespoons parsley, optional, minced
Directions
Step 1 –Preheat the oven to 375 degrees F.
Step 2 –Place the chicken on a cutting board.
Step 3 –With a small, sharp knife, carefully cut a pocket into the side of the chicken breasts, taking care not to cut it all the way through.
Step 4 –Season the chicken with salt, both inside and out.
Step 5 –In a small bowl, mix the garlic, pesto, cream cheese, and mozzarella.
Step 6 –Layer the inside of the chickens with an even amount of the cream cheese mixture, sundried tomatoes, and spinach, securing the openings with toothpicks.
Step 7 –Heat the olive oil in a cast-iron pan or oven-proof skillet over medium heat.
Step 8 –Sear the chicken until golden brown, about 3-4 minutes per side.
Step 9 –Transfer the skillet to the oven and roast until the chicken is 165 degrees F internally in the thickest part, about 16-18 minutes.
Step 10 –Sprinkle with parsley and serve.
