Ingredients
- 1/2 cup (1 stick) butter, melted, plus more for skillet
- 1 cup buttermilk
- 1/4 cup honey
- 2 large eggs
- 1 cup all-purpose flour
- 1 cup yellow cornmeal
- 2 1/2 teaspoons baking powder
- 1/4 teaspoon kosher salt
- 6 ounces pepper jack cheese, cubed
- chives, freshly chopped, for garnish
Directions
Step 1 –Preheat the oven to 375 degrees F.
Step 2 –Butter a 10- or 12-inch oven-safe skillet.
Step 3 –In a medium bowl, whisk together the buttermilk, the melted butter, the honey, and the eggs until combined.
Step 4 –In a large bowl, whisk together the flour, the cornmeal, the baking powder, and the salt.
Step 5 –Pour the wet mixture over the dry mixture and stir until just combined.
Step 6 –Spread half of the cornbread batter into the prepared skillet and scatter the pepper jack cheese over the batter in an even layer.
Step 7 –Pour the remaining batter into the prepared skillet and spread it to cover the cheese.
Step 8 –Bake until golden and cooked through, about 25-30 minutes.
Step 9 –Let the cornbread cool for 5 minutes in the skillet, then garnish it with chives.
Step 10 –Cut it into squares and serve.
