Ingredients
- 1 cup butter, softened
- 3/4 cup sugar
- 3/4 cup brown sugar, packed
- 2 large eggs
- 1 teaspoon vanilla extract
- 3 cups quick-cooking oats
- 1 1/2 cups all-purpose flour
- 1 (3.4-ounce) package instant vanilla pudding mix
- 1 teaspoon baking soda
- 1 teaspoon salt
- 2 cups semisweet chocolate chips
- 1 cup nuts, chopped
Directions
Step 1 –Preheat the oven to 375 degrees F.
Step 2 –In a large mixing bowl, add the butter, the sugar, and the brown sugar and beat with an electric hand mixer until light and fluffy.
Step 3 –Beat the eggs and the vanilla into the butter mixture.
Step 4 –In a medium bowl, combine the oats, the flour, the pudding mix, the baking soda, and the salt.
Step 5 –Gradually add the oat mixture to the butter mixture and mix well.
Step 6 –Add the chocolate chips and the nuts to the dough mixture and stir to combine.
Step 7 –Drop the dough in level tablespoonfuls 2-inches apart onto ungreased baking sheets.
Step 8 –Bake the cookies until they are lightly browned, about 10-12 minutes.
Step 9 –Transfer the cookies to wire racks to cool.
Step 10 –Serve.
