Ingredients

  • 2 1/4 teaspoons active dry yeast
  • 1/4 cup warm water, about 110 degrees F, plus 1 tablespoon water, room temperature, divided
  • 1 cup milk, room temperature
  • 1/4 cup granulated sugar
  • 1 1/4 teaspoons salt
  • 1/4 teaspoon crushed rosemary
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon celery salt
  • 1/4 cup unsalted butter, melted, plus 1 tablespoon butter, softened, for greasing the bowl
  • 1/4 teaspoon dried thyme leaves
  • 2 large eggs, divided
  • 3 1/2 cups all-purpose flour
  • 8 strips bacon, cooked and crumbled

Directions

Step 1 –In a small bowl, add the active dry yeast and 1/4 cup of the warm water and lightly stir until the yeast has dissolved.

Step 2 –In the bowl of a stand mixer with the whisk or paddle attachment, add the milk, the granulated sugar, the salt, the rosemary, the garlic powder, the celery salt, 1/4 cup of the melted butter, the thyme, 1 of the eggs, 2 cups of the flour, and the yeast mixture and beat until the dough is smooth.

Step 3 –Add the remaining 1 1/2 cups of flour and the crumbled bacon to the dough mixture and stir to combine.

Step 4 –Switch the stand mixer’s attachment to the dough hook and knead until the dough is smooth and elastic, about 8-10 minutes.

Step 5 –In a clean, large bowl, add 1 tablespoon of the softened butter and generously coat the inside of it.

Step 6 –Transfer the dough to the greased bowl and turn it to coat on all sides with the butter.

Step 7 –In a warm, dry space, cover the bowl with plastic wrap and let the dough rise until it has doubled in size, about 1 hour 30 minutes.

Step 8 –Grease a 9×13-inch baking dish.

Step 9 –Punch down the dough, then use a knife to cut it into 24 uniform pieces.

Step 10 –Use your hands to shape the dough pieces into smooth, tight balls.

Step 11 –Place the dough balls in the prepared baking dish in a single, tightly arranged layer.

Step 12 –Cover the dish with a lightweight kitchen towel and let the rolls rise until they have nearly doubled in size, about 45 minutes-1 hour.

Step 13 –Preheat the oven to 400 degrees F.

Step 14 –In a small bowl, add the remaining egg and 1 tablespoon of the room temperature water and whisk to combine.

Step 15 –Use a pastry brush to lightly brush the egg wash mixture over each of the rolls.

Step 16 –Bake the rolls until they are golden-brown and reach an internal temperature of 185-190 degrees F, about 15-20 minutes.

Step 17 –Serve.
