Ingredients

  • 1 red bell pepper, cut into strips
  • 1 green bell pepper, cut into strips
  • 1/2 sweet yellow onion, thinly sliced
  • 1 tablespoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 2 pounds chicken breast, boneless and skinless, cut into thin cutlets
  • 1 (15-ounce) can crushed tomatoes
  • 4 cloves garlic, pressed
  • 1 tablespoon balsamic vinegar
  • 1 cup mozzarella cheese, shredded

Directions

Step 1 –Preheat the oven to 400 degrees F.

Step 2 –Grease a 9×13-inch baking dish.

Step 3 –Evenly spread the red bell peppers, the green bell peppers, and the onion into the bottom of the prepared baking dish.

Step 4 –In a small bowl, mix the oregano, the basil, the salt, and the pepper together.

Step 5 –Place the chicken in a single layer on top of the peppers and sprinkle with 1/2 of the seasoning mixture.

Step 6 –Mix the crushed tomatoes, the remaining seasoning mixture, the garlic, and the balsamic vinegar together and pour it over the top of the chicken breasts.

Step 7 –Bake the chicken-vegetable mixture for 35 minutes.

Step 8 –Sprinkle the mozzarella cheese over the chicken breasts, then cook until the meat reaches an internal temperature of 165 degrees F and the sauce is bubbling on the sides, about 5-10 minutes.

Step 9 –Serve.
