Ingredients
- 1 tablespoon olive oil, plus more for drizzling
- 6 chicken breasts, halved lengthwise
- salt, to taste
- ground black pepper, to taste
- 3/4 cup all-purpose flour
- 1 tablespoon paprika
- 2 eggs, beaten
- 2 cups seasoned breadcrumbs
- 1 large lemon, zested
Directions
Step 1 –Preheat the oven to 425 degrees F.
Step 2 –Line a large baking sheet with aluminum foil and drizzle 1 tablespoon of the olive oil over it.
Step 3 –Place the baking sheet in the preheated oven.
Step 4 –Flatten the chicken breasts so they are all about 1/4-inch thick.
Step 5 –Season the chicken with salt and pepper.
Step 6 –Mix the flour and paprika together on a large plate.
Step 7 –Beat the eggs with salt and pepper in a shallow bowl.
Step 8 –Mix the bread crumbs and lemon zest together on a separate large plate.
Step 9 –Dredge each chicken piece in the flour mixture, then the egg, then the breadcrumbs mixture, and set each aside in a single layer on a clean plate. Continue the process until all of the chicken breasts are coated.
Step 10 –Remove the baking sheet from the oven, and arrange the chicken in 1 layer on the sheet.
Step 11 –Drizzle the olive oil over each piece of the coated chicken.
Step 12 –Bake in the preheated oven for 5-6 minutes.
Step 13 –Flip the chicken and continue baking until it is no longer pink in the center and the breading is lightly browned, 5-6 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F.
Step 14 –Serve!
