Ingredients
- 1/4 teaspoon salt, or to taste
- 1/4 teaspoon pepper, or to taste
- 3 medium zucchini, cut into sticks
- 1 cup breadcrumbs
- 1/2 cup parmesan cheese, grated
- 1 egg
- ranch dressing, optional, for serving
Directions
Step 1 –Preheat the oven to 425 degrees F.
Step 2 –Use parchment paper to cover a baking sheet.
Step 3 –Beat the egg in a shallow bowl or plate and season with salt and pepper.
Step 4 –In another shallow bowl or plate, combine the breadcrumbs together with the parmesan cheese and season it with salt and pepper.
Step 5 –Dip each zucchini stick in the egg wash, and then roll in the breadcrumb mixture. Cover each stick fully with breadcrumbs by rolling.
Step 6 –Place the coated sticks on the prepared baking sheet.
Step 7 –Transfer the baking sheet to the oven and bake until golden and crispy, about 20-25 minutes. Serve with the ranch dressing.
