Follow singer-songwriter Jack Johnson’s lead and make Banana Pancakes “and pretend like it’s the weekend.” When the bananas hit the griddle they caramelize and sweeten even more, adding a great depth of flavor to the already delicious pancakes. Banana Pancakes are a decadent way to enjoy breakfast on the weekend — or on a weekday, for that matter. We won’t tell.

Ingredients
- 1 cup flour
- 1 tablespoon granulated sugar
- 2 teaspoons baking powder
- 1/4 teaspoon table salt
- 1 egg
- 1 cup milk
- 2 tablespoons vegetable oil
- 2 bananas, sliced thin
Directions
Step 1 –Combine the flour, the sugar, the baking powder, and the salt.
Step 2 –In a separate bowl, mix together the egg, the milk, the vegetable oil, and the bananas.
Step 3 –Stir the flour mixture into the banana mixture; the batter will be slightly lumpy.
Step 4 –Lightly grease a griddle or frying pan over medium-high heat on the stovetop.
Step 5 –Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake.
Step 6 –Cook until pancakes are golden-brown on both sides.
Step 7 –Serve hot.
