Sweet potatoes are just the best! Not only do they have all sorts of health benefits, but they’re just so tasty… especially when you season them just right. Well, Bang-Bang Sweet Potatoes brings you those beloved spuds plus a nice little spice to create the most exciting side to ever be served on your plate! Seriously! No matter what else you’re eating, these Bang-Bang Sweet Potatoes will make sure your meal is as exciting as a firework show!

Ingredients

  • 1/4 cup coconut oil, melted
  • 1 lime, zested and juiced
  • 2 teaspoons kosher salt
  • 2 teaspoons sriracha
  • 1 1/2 pounds sweet potatoes, cut into 1-inch chunks
  • fresh cilantro, to taste, coarsely chopped, for garnish

Directions

Step 1 –Preheat the oven to 425 degrees F.

Step 2 –In a large bowl, whisk the coconut oil, the lime juice, the salt, and the sriracha together.

Step 3 –Add the sweet potatoes to the sriracha mixture and toss to combine.

Step 4 –Divide the coated sweet potatoes evenly between two sheet pans.

Step 5 –Roast the coated sweet potatoes, tossing occasionally and rotating the pans halfway through, until they are fork-tender, about 35-45 minutes.

Step 6 –Transfer the roasted sweet potatoes to a serving platter.

Step 7 –Serve the sweet potatoes garnished with the lime zest and the cilantro.
