Ingredients
- 4 sweet potatoes, cooked, about 1/2 pound each
- 2 tablespoons olive oil
- 1 pound chicken breasts, pounded thin, cut into 4 portions
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 3/4 cup BBQ sauce
- 1/2 red onion, finely diced
- salt, to taste
- pepper, to taste
- cilantro, finely chopped
- cheese, optional
- dill pickle relish, optional
- pickled jalapeños, optional
Directions
Step 1 –Gently salt the sweet potatoes, and poke a few holes into each potato with a fork.
Step 2 –Cook the sweet potatoes in place in the oven for around 45 minutes at 400 degrees F. To speed up your preparation, prepare the sweet potatoes in an instant pot.
Step 3 –Using a large skillet over medium heat, add in the olive oil and the chicken.
Step 4 –Cook the chicken, covered for 10 to 12 minutes, turning the chicken breasts halfway through.
Step 5 –Use an instant meat thermometer to make sure that the chicken breasts have reached 165 degrees F.
Step 6 –Shred the chicken breasts with a fork, and add in your favorite BBQ sauce.
Step 7 –Mix it until the sauce has evenly distributed throughout the mixture.
Step 8 –Finally, slice the sweet potato open, and add the BBQ chicken onto the sweet potato.
Step 9 –Garnish the top of the dish with some diced red onion, salt, pepper, cilantro, cheese, and relish.
