Be-Mine Pie

Ingredients

  • 36 chocolate sandwich cookies, vanilla-cream-filled
  • 2 sticks butter, divided
  • 2/3 cup brown sugar, packed
  • 1 1/4 cups heavy whipping cream, divided
  • 1 (12-ounce) bag dark chocolate chips

Directions

Step 1 –In a food processor or blender, add the cookies and process until they are finely crushed.

Step 2 –In a small pan over medium heat, melt 1 stick of the butter.

Step 3 –Add the melted butter to the cookie crumbs and stir to combine.

Step 4 –Add the cookie crumb mixture to an ungreased 10-inch pie plate and evenly press it into the bottom and up the sides of it.

Step 5 –Place the pie plate in the freezer and let the crust set, about 10 minutes.

Step 6 –In the same pan, add the remaining butter and the brown sugar and cook, whisking constantly, until it is bubbly, about 2 minutes.

Step 7 –Transfer the pan to a wire rack and slowly add 1/4 cup of the heavy whipping cream to the butter-brown sugar mixture. Whisk until it is smooth.

Step 8 –Let the caramel mixture cool, about 15 minutes.

Step 9 –Pour the caramel mixture over the chilled crust.

Step 10 –Place the pie in the freezer and let it chill just until it is set, about 30-45 minutes. Do not fully freeze.

Step 11 –In a heat-safe medium bowl, add the dark chocolate chips.

Step 12 –In a medium saucepan over medium-high heat, add the remaining heavy whipping cream and bring to a simmer.

Step 13 –Add the simmered cream to the dark chocolate chips and let it sit, about 5 minutes.

Step 14 –Whisk the chocolate mixture until it is completely smooth.

Step 15 –Transfer the pie from the freezer and pour the chocolate mixture over the caramel layer.

Step 16 –Place the pie in the freezer and let it chill until it is just set, about 30 minutes.

Step 17 –Slice and serve.
