Beef Barbacoa truly melts in the mouth and is packed with savory, citrus, herbaceous flavors, and just the right amount of heat. Ingredients
- 1 (3-pound) beef chuck roast, fat trimmed and cut into 2-inch chunks
- 4 cloves garlic, minced
- 2 chipotles in adobo sauce, chopped
- 1 (4-ounce) can diced green chiles
- 1 small white onion, finely chopped
- 1/4 cup lime juice
- 2 tablespoons apple cider vinegar
- 3 bay leaves
- 1 tablespoon ground cumin
- 1 tablespoon oregano, dried
- 2 teaspoons fine sea salt
- 1 teaspoon ground black pepper
- 1/4 teaspoon ground cloves
- 1/2 cup beef stock or water
Directions
Step 1 -Combine all of the ingredients in a large bowl and toss to combine.
Step 2 -Place the beef mixture in a slow cooker and cook on low until the beef falls apart easily, about 6-8 hours.
Step 3 -Shred the beef using two forks inside of the cooker.
Step 4 -Stir the shredded beef into the cooking juices.
Step 5 -Cover and cook for 10 minutes.
Step 6 -Remove the bay leaves with tongs.
Step 7 -Serve.
