  • 1 tablespoon canola oil
  • 1 1/2 pounds ground sirloin
  • 1/2 medium red onion, diced
  • 1 (15-ounce) can fire-roasted tomatoes, diced
  • 1 (15-ounce) can pinto beans, drained and rinsed
  • 1 (1-ounce) package taco seasoning
  • 1/2 cup water
  • 9 (8-inch) corn tortillas
  • 3 cups cheddar cheese, shredded


Step 1 –Preheat the oven to 400 degrees F.

Step 2 –In a large skillet over high heat, add the oil and the sirloin and cook, while crumbling the meat, until it is no longer pink, about 5-7 minutes.

Step 3 –Add the onion to the sirloin and cook, stirring often, until it has softened, about 5 minutes.

Step 4 –Stir the tomatoes, the pinto beans, the taco seasoning, and the water into the sirloin mixture and bring it to a boil.

Step 5 –Reduce the heat to medium and simmer the sirloin mixture, stirring often, until it has slightly reduced, about 3 minutes.

Step 6 –Transfer the sirloin mixture from the heat.

Step 7 –In a dry skillet over high heat, warm the tortillas, about 15 seconds per side.

Step 8 –Place 3 of the warmed tortillas at the bottom of an 8-inch square baking dish.

Step 9 –Top the tortillas with 2 cups of the sirloin mixture.

Step 10 –Sprinkle the sirloin layer with 1/2 cup of the cheese.

Step 11 –Repeat the layers twice ending with the cheese.

Step 12 –Bake the casserole, uncovered, until the cheese has melted and is heated through, about 8 minutes.

Step 13 –Serve.
