Everyone’s happy to see this dip make an appearance at the party; that is, after all, how it got its name! Beloved Potluck Dip is a refreshing vegetarian dip ready and loaded with nutty, lime-infused quinoa and a hearty, creamy, spicy black bean purée. There’s also plenty of bright veggies and a tangy avocado to really display a dazzling array of flavors! Ingredients
- 2 (15-ounce) cans black beans, rinsed and drained
- 1 1/2 teaspoons ground cumin
- 1 1/2 teaspoons paprika
- 1/2 teaspoon cayenne pepper
- 1 2/3 cups water, divided
- salt, to taste
- pepper, to taste
- 2/3 cup quinoa, rinsed
- 5 tablespoons lime juice, divided
- 2 medium ripe avocados, peeled and coarsely chopped
- 2 tablespoons plus 3/4 cup sour cream, divided
- 1/4 cup fresh cilantro, minced
- 3 plum tomatoes, chopped
- 3/4 cup cucumber, peeled and seeded, finely chopped
- 3/4 cup zucchini, finely chopped
- 1/4 cup red onion, finely chopped
- cucumber slices, optional, to taste, for serving

Directions
Step 1 –Add the black beans, the cumin, the paprika, the cayenne, and 1/3 cup of the water to a food processor.
Step 2 –Pulse the bean mixture together until smooth.
Step 3 –Season the bean mixture with the salt and the pepper.
Step 4 –In a small saucepan, cook the quinoa with the remaining water, according to the package directions.
Step 5 –Fluff the quinoa with a fork.
Step 6 –Drizzle the quinoa with 2 tablespoons of the lime juice.
Step 7 –In a separate bowl, mash together the avocados, 2 tablespoons sour cream, the cilantro, and the remaining lime juice.
Step 8 –In a 2 1/2-quart serving dish, combine the bean mixture, the quinoa, the avocado mixture, the remaining sour cream, the tomatoes, 3/4 cup of the chopped cucumber, the zucchini, and the red onion.
Step 9 –Serve immediately with the cucumber slices.
