Ingredients

  • 1 pound fresh green beans, trimmed
  • 1 1/2 tablespoons unsalted butter, divided
  • 1 1/2 cups frozen pearl onions, thawed and patted dry with paper towels
  • 1 clove garlic, minced
  • 1/3 cup balsamic vinegar
  • 1 tablespoon granulated sugar
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper

Directions

Step 1 –Bring a large saucepan full of water to a boil.

Step 2 –Cook the beans in the water until they are crisp-tender, about 3-4 minutes.

Step 3 –Plunge the beans into an ice bath to stop the cooking process, then drain the green beans well.

Step 4 –Heat 1 tablespoon of the butter in a large nonstick skillet over medium heat.

Step 5 –Add the pearl onions to the butter and cook, stirring often, until they are lightly caramelized and tender, about 10 minutes.

Step 6 –Add the garlic to the onions and cook, stirring occasionally, until the garlic is fragrant, about 1 minute.

Step 7 –Add the balsamic vinegar and the sugar to the onion mixture and cook until it reduces to a light syrup consistency, about 3-4 minutes.

Step 8 –Add the beans, the salt, the pepper, and the remaining butter to the onion mixture and toss to coat.

Step 9 –Serve immediately.
