Ingredients
- 1 cup rolled oats
- 1/4 cup flour
- 1/2 teaspoon cinnamon
- 1/4 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 2 tablespoons coconut oil
- 2 eggs
- 1/4 cup maple syrup
- 1/4 cup crunchy or creamy peanut butter
- 1/2 teaspoon vanilla extract
- 1/3 cup chocolate chips

Directions
Step 1 –Preheat the oven to 350 degrees F.
Step 2 –Line an 8-inch square baking dish with parchment paper.
Step 3 –In a medium bowl, add the oats, the flour, the cinnamon, the baking powder, the baking soda, and the salt and stir to combine.
Step 4 –In a microwave-safe bowl, add the coconut oil and heat in the microwave, about 15-20 seconds.
Step 5 –Add the eggs to the coconut oil and whisk to combine.
Step 6 –Add the maple syrup, the peanut butter, and the vanilla extract to the egg mixture and mix until well-combined.
Step 7 –Add the egg mixture to the oat mixture and stir until just combined.
Step 8 –Fold the chocolate chips into the oat mixture.
Step 9 –Evenly spread the oat mixture in the bottom of the prepared baking dish.
Step 10 –Bake the oat mixture until it is golden-brown, about 20-25 minutes.
Step 11 –Let the oat mixture cool.
Step 12 –Cut into individual bars and serve.
