Ingredients
For the burger:
- 3 tablespoons olive oil, divided, plus more for brushing
- 1 medium yellow onion, minced
- 2 large cloves of garlic, minced
- 1 (15-ounce) can of garbanzo beans, drained and rinsed
- 2 cups white rice, cooked
- 1 cup walnuts, finely crushed after measuring
- 3/4 cup whole wheat flour
- 1 tablespoon cumin
- 1 1/2 teaspoons garlic powder
- 1 1/2 teaspoons onion powder
- 1 1/2 teaspoons kosher salt
- 1 teaspoon black pepper
- 1 egg white
- barbecue sauce, to taste
For serving:
- 6 hamburger buns
- guacamole, special burger sauce, or other condiments, optional, to taste
- tomato, optional, sliced
- lettuce leaves, optional, to taste
Directions
Step 1 –Preheat the grill to medium heat.
Step 2 –In a large skillet, heat 1 tablespoon of olive oil.
Step 3 –Add the onion and sauté until golden and translucent, about 5 minutes.
Step 4 –Add the garlic in during the last minute of cooking the onions, cooking until fragrant. Remove the saucepan from the heat.
Step 5 –Place the garbanzo beans in the bottom of a large bowl. Mash the beans with a fork until about 90% of the beans are mashed.
Step 6 –Add the cooked rice to the garbanzo beans.
Step 7 –Add the onion to the garlic mixture, along with 2 tablespoons olive oil, the walnuts, flour, cumin, garlic powder, onion powder, kosher salt, and black pepper, mixing everything together evenly.
Step 8 –Stir in the egg white and mix until the mixture resembles a sticky dough.
Step 9 –Using your hands, form six 1-inch-thick patties, firmly patting and squeezing the dough.
Step 10 –Set the patties on a plate.
Step 11 –Brush the patties on both sides with the remaining olive oil.
Step 12 –Place the burgers on the grill and grill until firm and until grill marks appear, about 10-12 minutes on one side.
Step 13 –Gently flip the burgers.
Step 14 –Brush the burgers with the barbecue sauce.
Step 15 –Grill the burgers until cooked through, about 10-12 minutes.
Step 16 –Serve the burgers immediately on hamburger buns with your choice of condiments, tomato, and lettuce.
