Better Bacon Chicken Bake

If the famous “chicken-bacon-ranch” combo is your jam, this dish of bliss will astound you! Better Bacon Chicken Bake is loaded to the rim with all your favorite flavors along with some rotini pasta, cheddar cheese, and a few pimientos. Then, it’s baked until golden brown to marry it all together. Yummy! Your fave flavors are famous for a reason and Better Bacon Chicken Bake takes them to a whole new level. It’s amazing!

Ingredients

  • 6 slices bacon, chopped
  • 1 small onion, chopped
  • 4 cloves garlic, finely chopped
  • 1 (8-ounce) package cream cheese, cubed
  • 2 cups milk
  • 1 (1-ounce) packet dry ranch seasoning mix
  • 3 cups mozzarella cheese, shredded, divided
  • 8 ounces rotini pasta, cooked according to the package directions
  • 4 cups rotisserie chicken, cooked and chopped
  • 4 ounces diced pimientos, drained
  • 1/2 cup green onions, sliced, plus more, to taste, for garnish

Directions

Step 1 –Preheat the oven to 375 degrees F.

Step 2 –Grease a 9×13-inch baking dish.

Step 3 –In a large skillet over medium heat, add the bacon, and cook, stirring frequently, until crispy, about 8 minutes.

Step 4 –Use a slotted spoon to transfer the cooked bacon to a paper-towel-lined plate to drain and cool.

Step 5 –Reserve the drippings in the skillet.

Step 6 –Crumble the cooled bacon into small pieces.

Step 7 –Add the onion and the garlic to the bacon drippings and cook, stirring frequently, until the onion is slightly softened, about 5 minutes.

Step 8 –Add the cream cheese, the milk, the ranch seasoning mix, and 1 cup of the mozzarella to the onion mixture and whisk until smooth. Transfer it away from the heat.

Step 9 –In a large bowl, add the cream cheese mixture, the cooked pasta, the chicken, the pimientos, 1/2 cup of the green onions and stir until well-combined.

Step 10 –Evenly spread the chicken mixture out into the prepared baking dish.

Step 11 –Sprinkle the crumbled bacon over the chicken mixture.

Step 12 –Sprinkle the remaining mozzarella cheese over the bacon.

Step 13 –Bake the casserole until the top is golden-brown and crispy, about 25-30 minutes.

Step 14 –Transfer the chicken bake from the oven and let it cool slightly.

Step 15 –Serve the casserole garnished with the extra green onion.
