Ingredients

  • 1 tablespoon sugar
  • 2 teaspoons salt
  • 1 teaspoon sweet paprika
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper
  • 1 (3-pound) brisket
  • 2 cups hickory wood chips
  • water, to taste
  • barbeque sauce, homemade or store-bought, to taste

Directions

Step 1 –Whisk together the sugar, the salt, the paprika, the onion powder, the black pepper, and the cayenne pepper.

Step 2 –Rub the outside of the brisket evenly with the rub.

Step 3 –Allow the seasoned brisket to sit on a cutting board at room temperature for 30 minutes.

Step 4 –Pour the wood chips in a grill-safe foil pan, adding enough of the water to just cover the chips.

Step 5 –Cover the grill-pan with foil, cutting slits in the foil to allow smoke to escape.

Step 6 –Light the grill and scrape the grates clean.

Step 7 –Turn off the burners on one half of the grill and keep the burners on the other half set to low heat.

Step 8 –Place the brisket directly on the lit side of the grill, fat-side up, and grill until browned on the bottom, about 5 minutes.

Step 9 –Turn the brisket over and grill until browned on the other side, about 5 minutes.

Step 10 –Place the brisket into a separate, clean grill-safe foil pan, fat-side up, and move it to the unlit side of the grill.

Step 11 –Place the covered pan with the wood chips on the lit side of the grill and close the grill.

Step 12 –Allow the brisket to cook at 300 degrees F until tender, about 3 hours.

Step 13 –In the final 30 minutes of grilling time, turn the brisket over so the fat-side is down and baste the brisket with the barbeque sauce.

Step 14 –Transfer the brisket from the grill and baste it again with the barbeque sauce.

Step 15 –Allow the brisket to rest on a clean cutting board for 10 minutes before slicing.

Step 16 –Serve.
