Ingredients

  • 1 package muffin mix, plus the ingredients called for on the package
  • fresh or frozen blueberries, to taste
  • lemon zest, to taste
  • sparkling sugar, to taste

Directions

Step 1 –Preheat the oven to 425 degrees F.

Step 2 –Line a standard muffin tin with paper liners, then coat the whole tin with nonstick spray.

Step 3 –In a large bowl, prepare the muffin mix, according to the package directions. Carefully use your hands to combine.

Step 4 –Mix the blueberries and the lemon zest into the muffin batter.

Step 5 –Fill each of the muffin cups 3/4 of the way full with the muffin batter.

Step 6 –Top the muffin batter with the sparkling sugar.

Step 7 –Bake the muffins, according to the package directions. If the package instructions call for a baking temperature below 425 degrees F, reduce the heat after the first 4-5 minutes of baking time to the recommended temperature.

Step 8 –Transfer the muffin tin to a wire rack to cool.

Step 9 –Serve.
