  • 8 stalks asparagus, woody bottoms removed, chopped into 1-inch pieces

  • pepper, to taste
  • 8 eggs
  • 2 tablespoons fat-free milk
  • 1/4 cup fresh goat cheese, crumbled
  • 4 ounces smoked salmon, chopped

Directions

Step 1 –Heat the butter in a large, nonstick skillet or sauté pan over medium heat until it has melted.

Step 2 –When the butter begins to foam, add the asparagus and cook until just tender, about 3-4 minutes.

Step 3 –Season the asparagus with the salt and the pepper.

Step 4 –Crack the eggs into a large bowl and whisk them with the milk.

Step 5 –Season the egg mixture with the salt and the pepper.

Step 6 –Add the egg mixture to the pan with the asparagus.

Step 7 –Reduce the heat to low and, using a wooden spoon, constantly stir and scrape the eggs until they begin to form soft curds, about 5 minutes.

Step 10 –Fold in the salmon.
