Ingredients
- 2 pounds chicken breasts
- 1 tablespoon sage
- salt, to taste
- pepper, to taste
- 32 ounces chicken broth, plus more to taste
- 1 (10.5-ounce) can cream of chicken soup
- 1 (32-ounce) package frozen cubed hashbrowns
- 8 ounces cheddar cheese, shredded
- 1 cup French fried onions, divided
- 1 cup frozen veggies
- 1/2 cup butter, melted
- 8 ounces sour cream

Directions
Step 1 –In a large pot, add the chicken breasts, the sage, the salt, and the pepper.
Step 2 –Pour the chicken broth over the chicken breasts so they are fully covered.
Step 3 –Bring the chicken breasts to a simmer, cover, and cook until they reach an internal temperature of 165 degrees F, about 30-35 minutes.
Step 4 –Reserve 1 cup of the chicken broth from the pot.
Step 5 –Preheat the oven to 400 degrees F.
Step 6 –Grease a 9×13-inch baking dish.
Step 7 –Transfer the chicken breasts from the pot and shred them with two forks.
Step 8 –In a large bowl, mix the cream of chicken soup, the chicken broth reserved from cooking the chicken, the hashbrowns, the cheese, 1/2 cup of the French fried onions, the veggies, the melted butter, and the sour cream together.
Step 9 –Pour the chicken mixture into the prepared baking dish and top with the remaining French fried onions.
Step 10 –Cover the dish with foil and bake until the hashbrowns are cooked through, about 30-45 minutes.
Step 11 –Uncover and bake the casserole until bubbly, about 5 minutes.
Step 12 –Serve.
