- 1 (30-ounce) bag frozen shredded hash browns
- 1 cup whole kernel corn
- 1/2 onion, diced
- 1 bell pepper, diced
- 1-2 jalapeños, grated
- 2 tablespoon butter, melted
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 2 1/2 cups Colby Jack cheese, grated and divided
- 1 pound pulled pork, cooked
- 1 cup BBQ sauce
Directions
Step 1 –Preheat the oven to 400 degrees F.
Step 2 –Coat a 9×13-inch casserole dish with nonstick spray.
Step 3 –In a large bowl, combine the hash browns, corn, onion, bell pepper, jalapeños, butter, salt, pepper, and 1 1/2 cups of cheese.
