Okay so the Birthday Loaf is actually kind of genius. It’s still a tender, fluffy, sweet birthday cake with loads of sprinkles mixed in and creamy frosting on top, but it’s served in loaf-form. That means it slices beautifully (so much easier for sharing) and in a way that makes it very easy to use the cake slices like sandwich slices. Imagine using Birthday Loaf to make an ice cream sandwich! Trust us, this is a charming and tasty variation of the typical birthday cake!

Ingredients

  • flour, to taste, for dusting the pans
  • 1 (15.25-ounce) box yellow cake mix
  • 1 (3.4-ounce) package vanilla-flavored instant pudding mix
  • 1 cup water
  • 1/2 cup vegetable oil
  • 3 eggs
  • 1 (1.75-ounce) container rainbow sprinkles, divided
  • 1/2 cup vanilla frosting, homemade or store-bought

Directions

Step 1 –Preheat the oven to 350 degrees F.

Step 2 –Grease the bottoms of two 8×4-inch loaf pans, then lightly dust the greased pan bottoms with the flour.

Step 3 –In a large bowl, add the cake mix, the pudding mix, the water, the oil, and the eggs and beat with an electric mixer on medium speed, scraping down the sides occasionally, until combined, about 2 minutes.

Step 4 –Add 1/4 cup of the sprinkles to the batter and stir to combine.

Step 5 –Divide the batter evenly between the prepared pans.

Step 6 –Bake until a toothpick inserted into the center comes out clean, about 45-50 minutes.

Step 7 –Allow the cakes to cool in the pans for 10 minutes.

Step 8 –Run a metal spatula around the edges of the loaves to loosen them from the pans, then transfer the loaves to a cooling rack.

Step 9 –Allow the cakes to cool completely, about 1 hour.

Step 10 –Spread the frosting on top of the loaves.

Step 11 –Sprinkle the loaves evenly with the remaining sprinkles.

Step 12 –Slice and serve.
