Ingredients
- 3 tablespoons colored sprinkles/jimmies
- 1 tablespoon plus 1 cup all-purpose flour
- 1 1/2 teaspoons baking powder
- 1 cup white cake mix
- 1 1/4 cups milk, plus more as needed
- 3 tablespoons vegetable oil
- 1 teaspoon vanilla
- 2 eggs
Directions
Step 1 –Preheat the skillet or griddle to medium-high heat, lightly greasing it.
Step 2 –Place the sprinkles and 1 tablespoon of the flour in a bowl, tossing to coat.
Step 3 –Combine the remaining flour, the baking powder, and the cake mix in a bowl.
Step 4 –In a separate bowl, mix the milk, the oil, the vanilla, and the eggs.
Step 5 –Add the wet mixture to the flour mixture and stir until just combined, creating a slightly lumpy batter. If the batter feels too thick, add extra milk.
Step 6 –Fold in the sprinkles, taking care not to let the colors run.
Step 7 –Pour 1/4 cup of the batter onto the prepared skillet and cook until the edges are heated through, about 2-3 minutes.
Step 8 –Flip the pancake and cook until heated through, about 1 minute.
