Lunchtime can get boring. The same bland sandwich over and over and over again. Blah. Well, it’s time to stop that and switch the excitement of going out for lunch with the made-from-home deliciousness that is Bistro BBQ Chicken Sandwich! The thrill starts when you trade your normal, mundane bread for a fluffy pretzel bun. The fun continues with some tender, juicy barbecue grilled chicken. Just to make sure you have plenty of flavors to keep you occupied, a nice tangy and crunchy helping of coleslaw is plopped on top. From now on, you’ll be watching the clock, anticipating noon so you can dig into a Bistro BBQ Chicken Sandwich!
Ingredients
- vegetable oil, to taste
- 1 1/2 pounds large chicken breast, boneless and skinless
- 2 teaspoons fine sea salt
- 2 teaspoons ground black pepper
- 1 1/2 cups barbecue sauce
- 6 pretzel buns
- 2 cups prepared coleslaw, homemade or store-bought
Directions
Step 1 –Heat a grill to medium heat.
Step 2 –Clean the grill grates, then use the vegetable oil to lightly oil the grates.
Step 3 –Season the chicken with the salt and the pepper.
Step 4 –Grill the seasoned chicken for 5 minutes, then flip and brush with 1/2 of the barbecue sauce.
Step 5 –Continue grilling the chicken breasts until an instant thermometer inserted into the thickest part reads 165 degrees F, about 5-7 minutes.
Step 6 –Transfer the chicken breasts to a plate and set them aside to cool slightly.
Step 7 –Use two forks to shred the chicken.
Step 8 –Place the shredded chicken in a bowl and toss it with the remaining barbecue sauce.
Step 9 –Divide the chicken evenly between the 6 pretzel buns and top each with the coleslaw.
Step 10 –Serve.
