Ingredients
For the batter:
- 4 tablespoons unsalted butter, melted, plus more, to taste, cold, for greasing the pan
- 1 egg
- 1/2 cup whole milk
- 3/4 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- 1/4 teaspoon salt
For the blueberry filling:
- 5 cups blueberries
- 1/3 cup granulated sugar
- 1 lemon, zested
- 3 tablespoons flour
Directions
Step 1 –Preheat the oven to 375 degrees F.
Step 2 –Grease the bottom and the sides of a 9×13-inch baking dish with the extra butter.
Step 3 –In a bowl, whisk the egg, the milk, 3/4 cup of the granulated sugar, the vanilla extract, and 4 tablespoons of the melted butter until smooth.
Step 4 –Add 1 cup of the flour, the baking powder, the cinnamon, and the salt to the sugar mixture and whisk until completely incorporated.
Step 5 –Let the batter stand for 10 minutes.
Step 6 –While the batter is standing, wash the blueberries and let them dry on paper towels.
Step 7 –In a bowl, combine the blueberries with the remaining granulated sugar, the lemon zest, and the remaining flour together.
Step 8 –Evenly spread the blueberry mixture into the prepared baking dish.
Step 9 –Drop small spoonfuls of the batter over the blueberry mixture, making sure there are even amounts throughout.
Step 10 –Bake the cobbler until the top is golden-brown, about 30-35 minutes.
Step 11 –Serve.
