Ingredients

  • 1 stick unsalted butter, room temperature
  • 1 clove garlic, finely grated
  • 1 tablespoon dry white wine
  • 1 tablespoon chives, diced
  • 1 teaspoon kosher salt
  • 1/2 tablespoon parsley, finely diced
  • 12 Atlantic or Pacific oysters, shucked
  • sea salt, to taste, for serving

Directions

Step 1 –In a bowl, combine the butter, the garlic, the white wine, the chives, the kosher salt, and the parsley.

Step 2 –Preheat the grill to 500 degrees F.

Step 3 –Layer slightly crumbled aluminum foil onto a sheet pan.

Step 4 –Place the shucked oysters onto the prepared sheet pan and gently press down so the oysters sit well on the pan.

Step 5 –Place one heaping teaspoon of the compound butter into each of the oysters.

Step 6 –Place the sheet pan over the heat and grill until the butter starts to bubble and the edges of the oysters turn slightly brown, about 4-6 minutes.

Step 7 –Wearing high heat gloves, use a spatula to transfer the oysters to a plate layered with the sea salt.
