Bounce-Pass Banana Bars

Ingredients

For the bars:

  • 1/2 cup butter, softened
  • 2 cups granulated sugar
  • 3 large eggs, room temperature
  • 1 1/2 cups ripe bananas, mashed
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • salt, to taste

For the frosting:

  • 1 (8-ounce) package cream cheese, softened
  • 1/2 cup butter, softened
  • 4 cups confectioners’ sugar
  • 2 teaspoons vanilla extract

Directions

Step 1 –Preheat the oven to 350 degrees F.

Step 2 –Grease a 15x10x1-inch baking dish.

Step 3 –In a large bowl, add 1/2 cup of the butter and the granulated sugar and beat with an electric hand mixer until it is light and fluffy, about 5-7 minutes.

Step 4 –Add the eggs, the bananas, and 1 teaspoon of the vanilla extract to the butter mixture and beat to combine.

Step 5 –In a medium bowl, add the flour, the baking soda, and the salt and whisk to combine.

Step 6 –Add the flour mixture to the butter mixture and stir with a rubber spatula until it is just combined.

Step 7 –Pour the batter into the prepared baking dish and bake until a toothpick inserted into the center comes out clean, about 20-25 minutes.

Step 8 –Transfer the baking dish to a wire rack and let the banana bars cool.

Step 9 –In a small bowl, add the cream cheese and the remaining butter and beat with an electric hand mixture until it is fluffy.

Step 10 –Add the confectioners’ sugar and the remaining vanilla extract to the cream cheese mixture and beat until it is smooth.

Step 11 –Spread the frosting over the cooled banana bars.

Step 12 –Cut the banana bars into squares and serve.
