Ingredients
- olive oil, to taste
- 1 pound ground breakfast sausage
- 1 Spanish onion, finely diced
- 1 large russet potato, diced
- 1 head broccoli, stem removed and cut into small florets
- kosher salt, to taste
- ground black pepper, to taste
- 3/4 cup whole milk
- 1/2 cup heavy cream
- 10 large eggs
- 1/2 bunch fresh dill, roughly chopped, for garnish
Directions
Step 1 –Preheat the oven to 400 degrees F.
Step 2 –Coat a 9×13-inch casserole pan with cooking spray.
Step 3 –Set a medium pan over medium heat and add the olive oil.
Step 4 –Add the sausage to the oil and cook, breaking it up with the back of a wooden spoon or spatula, until it is cooked through and beginning to brown, about 5 minutes.
Step 5 –Transfer the sausage to a bowl and set it aside.
Step 6 –Add the onion to the pan and sauté until it is translucent and any browned bits of sausage at the bottom of the pan have been picked up by the onion, about 5 minutes.
Step 7 –Add the potatoes to the onion and cook until they are tender and just beginning to brown, about 7 minutes. Add more of the olive oil as needed to prevent the potatoes from burning or sticking to the bottom of the pan.
Step 8 –Transfer the potatoes and the onions to the bowl with the sausage.
Step 9 –Coat the pan with the olive oil and add the broccoli.
Step 10 –Sauté the broccoli until it is just tender, about 5 minutes.
Step 11 –Season the broccoli with the salt and the pepper and transfer it to the sausage mixture.
Step 12 –In a separate bowl, add the milk, the heavy cream, the eggs, the salt, and the pepper and whisk to combine.
Step 13 –Transfer the sausage mixture to the prepared casserole pan and toss it to evenly distribute.
Step 14 –Gently pour the egg mixture over the top of the sausage mixture.
Step 15 –Bake until the frittata is puffed, begins to brown, and is set in the middle, about 30 minutes.
Step 16 –Allow the frittata to set for 5 minutes.
Step 17 –Garnish the frittata with the dill and serve.
