Ingredients
For the coleslaw:
- 1/3 cup mayonnaise
- 2 tablespoons apple cider vinegar
- 1 1/2 tablespoons granulated sugar
- 1/2 teaspoon Dijon mustard
- 1/2 teaspoon celery seed
- 4 scallions, white and light green portions only, thinly sliced
- 3 cups coleslaw mix
For the sandwiches:
- Russian dressing, store-bought or homemade, to taste
- 12 slices rye bread
- 1 1/2 pounds pastrami, thinly sliced
- potato salad, optional, store-bought or homemade, to taste, for serving
Directions
Step 1 –In a large bowl with an airtight lid, add the mayonnaise, the apple cider vinegar, the granulated sugar, the Dijon mustard, and the celery seed and whisk to combine.
Step 2 –Add the scallions and the coleslaw mix to the mayonnaise mixture and toss until well-combined.
Step 3 –Cover and transfer the coleslaw mixture to the refrigerator to marinate until ready to use, about 1 hour.
Step 4 –On a flat surface with a butter knife, evenly spread the Russian dressing on each of the 12 slices of rye bread.
Step 5 –Add 4 ounces of the pastrami to each of the 6 bottom slices of the rye bread.
Step 6 –Evenly add about 1/2 cup of the coleslaw mixture on top of the pastrami layer.
Step 7 –Add the remaining 6 slices of rye bread to the top of the coleslaw mixture.
Step 8 –Plate with the potato salad and serve, using toothpicks to hold the sandwiches together if needed.
