Ingredients

  • 3 pounds Yukon Gold Potatoes, peeled and thinly sliced
  • 1/4 cup water
  • 1/4 cup butter, cubed
  • 1 large sweet onion, chopped
  • 4 cloves garlic, chopped
  • 1/4 cup all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1/8 teaspoon cayenne pepper
  • 2 cups chicken broth
  • 1/3 cup half-and-half cream
  • 1 cup Gruyere or Swiss cheese, shredded
  • 1 cup Monterey Jack or cheddar cheese, shredded
  • fresh chives, optional, minced, for garnish

Directions

Step 1 –Preheat the oven to 400 degrees F.

Step 2 –Grease a 9×13-inch baking dish.

Step 3 –Place the potatoes and the water in a large, microwave-safe bowl.

Step 4 –Cover the bowl and microwave on high until the potatoes are almost tender, about 12-14 minutes. You may want to stir the potatoes every few minutes to ensure even cooking.

Step 5 –In a 6-quart stockpot, heat the butter over medium-high heat.

Step 6 –Sauté the onion and the garlic until tender, about 5-7 minutes.

Step 7 –Stir in the flour, the salt, the pepper, and the cayenne pepper until blended.

Step 8 –Gradually stir in the broth and the cream.

Step 9 –Bring the mixture to a boil, stirring occasionally, until slightly thickened, about 2-3 minutes.

Step 10 –Stir in the Gruyere cheese and the Monterey Jack cheese until melted.

Step 11 –Drain the potatoes.

Step 12 –Add the potatoes to the sauce, stirring gently.

Step 13 –Transfer the potato mixture to the prepared baking dish.

Step 14 –Bake, uncovered, until slightly browned, about 20 minutes.

Step 15 –Sprinkle with the chives and serve hot.
