This Buffalo Chicken Loaf uses juicy ground chicken as the base, letting it mingle with the buttery, spicy, zesty Buffalo sauce and the melty, funky blue cheese. Then it’s topped with bacon. Always a good decision. With a sweetened Buffalo glaze on top, the Buffalo Chicken Loaf makes an amazing first, second, and third impression!
Ingredients
For the loaf:
- 1 cup dry whole wheat breadcrumbs
- 2 celery ribs, chopped
- 1 small onion, chopped
- 2 large eggs, lightly beaten
- 1/2 cup Buffalo wing sauce
- 3 cloves garlic, minced
- 1 teaspoon pepper
- 1 cup blue cheese, crumbled, divided
- 1 pound ground chicken
- 6 strips bacon
For the glaze:
- 1/4 cup Buffalo wing sauce
- 4 teaspoons prepared mustard
- 4 teaspoons honey
- celery, optional, chopped, to taste
Directions
Step 1 –Preheat the oven to 350 degrees F.
Step 2 –Grease a 15x10x1-inch baking pan.
Step 3 –In a large bowl, combine the breadcrumbs, the celery, the onion, the eggs, 1/2 cup of the Buffalo sauce, the garlic, and the pepper.
Step 4 –Stir in 3/4 cup of the blue cheese.
Step 5 –Add the chicken and mix lightly but thoroughly.
Step 6 –Shape the meat mixture into an 8×4-inch loaf on the prepared baking sheet.
Step 7 –Arrange the bacon over the top of the loaf.
Step 8 –In a small bowl, mix the remaining Buffalo sauce, the mustard, and the honey.
Step 9 –Spoon the glaze over the meat loaf.
Step 10 –Bake until a thermometer inserted into the center reads 165 degrees F, about 45-50 minutes.
Step 11 –Sprinkle the loaf with the remaining blue cheese and the extra celery.
Step 12 –Let stand for 10 minutes before slicing.
Step 13 –Serve.
