Ingredients
For the meatballs:
- 2 pounds ground turkey
- 1 1/2 cups panko breadcrumbs
- 2 large eggs
- 5 cloves garlic, minced
- 1/2 red onion, finely diced
- 1 teaspoon salt
- 1/2 teaspoon ground black pepper
- 1 teaspoon Italian seasoning
- 1/2 teaspoon onion powder
- 1/2 cup green onions, thinly sliced
- 2 tablespoons chives, optional, chopped, for garnish
For the buffalo sauce:
- 1 cup hot sauce
- 4 tablespoons butter, melted
- 1/2 cup Greek yogurt
Directions
Step 1 –Preheat the oven to 400 degrees F.
Step 2 –Line a large baking sheet with parchment paper and set it aside.
Step 3 –In a large bowl, add the ground turkey, panko breadcrumbs, eggs, garlic, chopped red onion, salt, black pepper, Italian seasoning, onion powder, and green onions.
Step 4 –Using clean hands or a mixing spoon, work the ingredients together until fully combined.
Step 5 –Roll the combined ground turkey mixture together into approximately 1 1/2-inch meatballs.
Step 6 –Repeat this process until all the mixture has been used, creating approximately 32 meatballs.
Step 7 –Place the meatballs onto the prepared baking sheet.
Step 8 –Bake until the outside is golden and cooked and the internal temperature is 165 degrees F, about 25 minutes.
Step 9 –In a medium bowl, combine the hot sauce and the melted butter.
Step 10 –Once combined, stir in the Greek yogurt.
Step 11 –Set the buffalo sauce aside in the refrigerator until ready to use.
Step 12 –Once the meatballs are ready, serve them with the buffalo sauce.
