Ingredients

  • 12 large eggs
  • 1 cup 2% milk
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 (30-ounce) package frozen shredded hash brown potatoes, thawed
  • 2 cups ham, fully cooked, cubed
  • 1 medium onion, chopped
  • 4 cups cheddar cheese, shredded

Directions

Step 1 –Grease a 5-quart slow cooker.

Step 2 –In a bowl, whisk the eggs, the milk, the salt, and the pepper together.

Step 3 –Place 1/3 of the potatoes in the prepared slow cooker.

Step 4 –Top the potatoes with 1/3 of the ham, 1/3 of the onion, and 1/3 of the cheese and repeat the layers twice, starting with the potatoes and ending with the cheese.

Step 5 –Pour the egg mixture over the cheese, cover, and refrigerate the casserole overnight.

Step 6 –Cook, covered, until the casserole is set and the edges begin to brown, on low heat, about 4-5 hours.

Step 7 –Turn the slow cooker off and remove the ceramic insert (if the slow cooker has one).

Step 8 –Let the casserole stand, uncovered, about 30 minutes

Step 9 –Serve.
