Ingredients
- 1/2 cup butter, softened
- 1 1/4 cups sugar
- 3 tablespoons all-purpose flour
- 1/4 teaspoon salt
- 3 large eggs
- 1 cup buttermilk
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
- 1 (9-inch) pastry crust, store-bought or homemade
Directions
Step 1 –Preheat the oven to 350 degrees F.
Step 2 –Beat the butter and the sugar in a large mixing bowl until creamy.
Step 3 –Add the flour, the salt, and the eggs to the butter mixture and beat until smooth.
Step 4 –Add the buttermilk, the lemon juice, and the vanilla to the filling mixture and blend well.
Step 5 –Pour the filling into the pie crust.
Step 6 –Place the pie pan on a cookie sheet and bake until it is lightly browned on top and mostly set, about 50-55 minutes.
Step 7 –Place the pie on a wire rack to cool.
Step 8 –Slice and serve.
