Ingredients

  • 1/2 cup cold butter, cubed
  • 1 cup all-purpose flour
  • 3/4 cup pecans, chopped, divided
  • 1 (8-ounce) package cream cheese, softened
  • 1 cup confectioners’ sugar
  • 1 (8-ounce) carton frozen whipped topping, thawed, divided
  • 3 1/2 cups 2% milk, cold
  • 2 (3.5-ounce) packages instant butterscotch pudding mix

Directions

Step 1 –Preheat the oven to 350 degrees F.

Step 2 –In a small bowl, cut the butter into the flour until the mixture is crumbly.

Step 3 –Add 1/2 cup of the pecans to the flour mixture and stir to combine.

Step 4 –Press the flour-pecan mixture into an ungreased 9×13-inch baking dish.

Step 5 –Bake the crust until lightly browned, about 20 minutes.

Step 6 –Allow the crust to cool completely.

Step 7 –In a small bowl, add the cream cheese and the confectioners’ sugar and beat until fluffy.

Step 8 –Fold in 1 cup of the whipped topping.

Step 9 –Spread the cream cheese mixture over the crust.

Step 10 –In a large bowl, add the milk and the pudding mix and whisk for 2 minutes.

Step 11 –Let the pudding mixture stand until soft-set, about 2 minutes.

Step 12 –Pour the pudding mixture over the cream cheese layer and spread it out evenly.

Step 13 –Refrigerate the dessert until set, about 15-20 minutes.

Step 14 –Top the dessert with the remaining whipped topping and the remaining pecans.

Step 15 –Refrigerate until chilled, about 1-2 hours.

Step 16 –Serve.
