Ingredients
For the burgers:
- olive oil, to taste, for oiling the grill grates
- 3 tablespoons milk
- 2 tablespoons quick-cooking oats
- 3/4 teaspoon salt
- 1/2 teaspoon ground cumin
- 1/2 teaspoon chili powder
- 1/2 teaspoon pepper
- 1 pound lean ground turkey
For the salad:
- 4 cups baby kale salad blend
- 1 1/2 cups fresh pineapple, cubed into 1/2-inch pieces
- 1 medium mango, peeled and thinly sliced
- 1 medium ripe avocado, peeled and thinly sliced
- 1 medium sweet red pepper, cut into strips
- 4 tomatillos, husks removed and thinly sliced
- 1/4 cup chipotle mayonnaise, optional, store-bought or homemade
Directions
Step 1 –Preheat the grill to medium heat.
Step 2 –Using the olive oil, grease the grill grates.
Step 3 –In a large bowl, mix the milk, the oats, the salt, the cumin, the chili powder, and the pepper.
Step 4 –Add the turkey and mix lightly, but thoroughly.
Step 5 –Shape the turkey mixture into four, 1/2-inch-thick, patties.
Step 6 –Grill the patties on the prepared rack, covered, until cooked to 165 degrees F internally, about 4-5 minutes per side.
Step 7 –Serve the turkey over the salad blend with the pineapple, the mango, the avocado, the red pepper, the tomatillos, and the chipotle mayonnaise.
