California Grilled Chicken Salad

Take a bite of California sunshine no matter where you are! Ingredients

For the vinaigrette:

  • 2 tablespoons olive oil
  • 2 tablespoons white balsamic vinegar
  • salt, to taste
  • fresh cracked pepper, to taste

For the salad:

  • 1 cup avocado, diced
  • 1 cup mango, diced
  • 12 ounces chicken breast, grilled and sliced
  • 2 tablespoons red onion, diced
  • 6 cups baby red butter lettuce

Directions

Step 1 –Whisk together the olive oil, the white balsamic vinegar, the salt, and the pepper. Set the dressing aside.

Step 2 –Toss the avocado, the mango, the chicken, and the red onion together.

Step 3 –Fill a large salad bowl or platter with the butter lettuce.

Step 4 –Top the lettuce with the chicken mixture.

Step 5 –Drizzle 1/2 the dressing over the salad and serve with the remaining dressing on the side.
