Ingredients
For the vinaigrette:
- 2 tablespoons olive oil
- 2 tablespoons white balsamic vinegar
- salt, to taste
- fresh cracked pepper, to taste
For the salad:
- 1 cup avocado, diced
- 1 cup mango, diced
- 12 ounces chicken breast, grilled and sliced
- 2 tablespoons red onion, diced
- 6 cups baby red butter lettuce
Directions
Step 1 –Whisk together the olive oil, the white balsamic vinegar, the salt, and the pepper. Set the dressing aside.
Step 2 –Toss the avocado, the mango, the chicken, and the red onion together.
Step 3 –Fill a large salad bowl or platter with the butter lettuce.
