Caramel Apple Cobbler

Nostalgia is a beautiful thing. The right smell or the right spoonful of sweetness can really transport you back in time. When it comes to nostalgia, there are few better time machines than the Caramel Apple Cobbler. It’s a dream of days gone by in a dish. Warm cinnamon, rich caramel, jammy apples, and a buttery, flaky crust… mmmm. All bubbly and warm, with creamy vanilla ice cream, what could be better? Remember Caramel Apple Cobbler when you crave the familiar comforts of life. It will truly be the apple of your eye!

Ingredients

For the apples:

  • 2 cups apples, such as Honeycrisp or Granny Smith, peeled and cut into 1/2-inch cubes
  • 1/2 cup butter
  • 1 cup brown sugar
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg, optional

For the cobbler mixture:

  • 1 1/2 cups self-rising flour
  • 1 cup granulated sugar
  • 3/4 cup plus 2 tablespoons whole milk, divided
  • 1 teaspoon vanilla extract

For the topping:

  • 1 cup brown sugar
  • 1 1/2 cups hot water
  • vanilla ice cream, optional, to taste

Directions

Step 1 –Preheat the oven to 350 degrees F.

Step 2 –Coat a 9×13-inch baking dish with nonstick cooking spray.

Step 3 –In a large saucepan over medium heat, add the apples, the butter, 1 cup of the brown sugar, the cinnamon, and the nutmeg and cook, while stirring constantly, until the mixture comes to a boil.

Step 4 –Reduce the heat to low and let the apple mixture simmer until the brown sugar is melted, about 2-3 minutes.

Step 5 –Evenly pour the apple mixture into the prepared baking dish.

Step 6 –In a large bowl, add the flour, the granulated sugar, 3/4 cup of the milk, and the vanilla extract and whisk until it is the consistency of pancake batter and well-combined. Add the extra milk, 1 tablespoon at a time, to reach the correct consistency, if needed. You may not need all of the extra milk.

Step 7 –Evenly and carefully pour the batter mixture over the top of the apple mixture.

Step 8 –Evenly sprinkle the remaining brown sugar over the top of the batter layer.

Step 9 –Evenly and carefully pour the hot water over the top of the cobbler mixture.

Step 10 –Bake until the cobbler is set in the center and golden-brown on top, about 50-55 minutes.

Step 11 –Serve the cobbler warm topped with the vanilla ice cream.
