Ingredients

For the cornbread:

  • 2 tablespoons butter
  • 2 (8.5-ounce) packages cornbread or muffin mix
  • 2 large eggs, room temperature, lightly beaten
  • 1/2 cup 2% milk
  • 1/2 cup plain yogurt
  • 1 (14.75-ounce) can cream-style corn
  • 1/2 cup cheddar cheese, shredded

For the honey butter:

  • 1/2 cup butter, softened
  • 2 tablespoons honey

Directions

Step 1 –Preheat the oven to 400 degrees F.

Step 2 –Place 2 tablespoons of the butter in a 10-inch cast-iron skillet or other ovenproof skillet.

Step 3 –Place the skillet in the oven until the butter has melted, about 4-6 minutes.

Step 4 –While the butter is melting, in a large bowl, combine the cornbread mixes, the eggs, the milk, and the yogurt until blended.

Step 5 –Stir the corn and the cheese into the cornbread mixture.

Step 6 –Carefully pour the cornbread mixture into the hot skillet.

Step 7 –Bake until a toothpick inserted in the center comes out clean, about 20-25 minutes.

Step 8 –While the cornbread is baking, in a small bowl, cream the remaining butter and the honey together.

Step 9 –Cut the cornbread into wedges.

Step 10 –Serve the honey butter with the warm cornbread.
