Cheesy Meatloaf Cups

This recipe for Cheesy Meatloaf Cups combines all the best elements of pizza (meat, sauce, and cheese) into a bite-size dish that can be baked in a muffin tin. Cheesy Meatloaf Cups would even work as appetizers with a side of pizza sauce to dip them into. The gooey burst of cheese when you bite into them is too tasty to resist. Plus, it’s low-carb, so the health-conscious can enjoy the same great flavors!

Ingredients

  • 1 large egg, lightly beaten
  • 1/2 cup pizza sauce, plus more, to taste, for serving
  • 1/4 cup seasoned breadcrumbs
  • 1/2 teaspoon Italian seasoning
  • 1 1/2 pounds ground beef
  • 1 1/2 cups part-skim mozzarella cheese, shredded
  • basil leaves, optional, to taste, for serving

Directions

Step 1 –Preheat the oven to 375 degrees F.

Step 2 –Mix the egg, 1/2 cup of the pizza sauce, the breadcrumbs, and the Italian seasoning in a large bowl.

Step 3 –Add the beef, and mix lightly but thoroughly.

Step 4 –Divide the mixture into 12 portions, then press each portion onto the bottom and up sides of a greased muffin cup.

Step 5 –Add the cheese to the centers of the meat cups.

Step 6 –Bake until the meat is cooked through, about 15-18 minutes.

Step 7 –Top them with the extra pizza sauce and the basil, and serve.
