Cheesy Meatloaf Subs

If you’re craving a sandwich, well, these are the sandwiches of all sandwiches. Cheesy Meatloaf Subs are just plain amazing. It’s simple as that. The fluffiest, buttered sub rolls are packed FULL with literal slices of hearty meatloaf. There’s lots of rich and tangy marinara and loads of melty mozzarella. It’s just yum. This isn’t your lunch’s sandwich… nope. It’s too hearty for that time of day! Okay, okay, you can eat it whenever you want, but we’re just saying these Cheesy Meatloaf Subs don’t come to play, so you better be hungry!

Ingredients

For the meatloaf:

  • 1 tablespoon olive oil
  • 3 cloves garlic, minced
  • 1 medium yellow onion, minced
  • 1 red bell pepper, minced
  • crushed red pepper, optional, to taste
  • 2 pounds ground beef
  • 1 cup parmesan, grated
  • 3/4 cup breadcrumbs
  • 1/4 cup fresh flat-leaf parsley, minced
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon garlic salt
  • 1 teaspoon kosher salt
  • 1 teaspoon freshly ground black pepper
  • 16 fresh basil leaves, chopped
  • 2 large eggs, lightly beaten
  • 1 cup marinara sauce, divided

For the sandwiches:

  • 6 tablespoons unsalted butter, room temperature
  • 6 soft sub rolls, split
  • garlic salt, to taste
  • 1 cup marinara sauce
  • 1 pound mozzarella, sliced

Directions

Step 1 –Preheat the oven to 350 degrees F.

Step 2 –Line a rimmed baking sheet with parchment paper.

Step 3 –In a medium skillet over medium heat, heat the oil.

Step 4 –Add the garlic, the onion, the bell pepper, and the crushed red pepper to the oil and sauté until the veggies are tender, about 5 minutes.

Step 5 –Let the veggies cool.

Step 6 –In a large bowl, add the beef, the parmesan, the breadcrumbs, the parsley, the Worcestershire sauce, 1 teaspoon of the garlic salt, the kosher salt, the pepper, the basil, the eggs, 1/2 cup of the marinara, and the cooled veggies and use your hands to combine.

Step 7 –Transfer the beef mixture to the prepared baking sheet and form into a loaf.

Step 8 –Coat the meatloaf with 1/2 cup of the marinara.

Step 9 –Bake the meatloaf until it reaches an internal temperature of 160 degrees F and is firm, about 45 minutes-1 hour.

Step 10 –Let the meatloaf rest for 5 minutes, then slice.

Step 11 –Spread the butter over the rolls and sprinkle with the extra garlic salt.

Step 12 –Place the rolls on a baking sheet and bake until they are lightly golden and toasted, about 5 minutes.

Step 13 –Add a slice of the meatloaf to each of the rolls and top with the remaining marinara and 3 slices of the mozzarella.

Step 14 –Bake the subs until the cheese has melted, about 8-10 minutes.

Step 15 –Serve.
