Two chicken halves, marinated in a tangy barbeque mixture, seasoned with zesty flavors, and brushed with more barbeque sauce as it grills to perfection; it makes the most of the poultry, that is for sure! Chef’s BBQ Chicken turns any cookout into a must-attend event and makes chicken the star of the show!
Ingredients
- 1 whole chicken, cut into halves
- 1/4 cup rice vinegar
- 2 tablespoons plus 1/2 cup barbeque sauce
- 2 cloves garlic, crushed
- olive oil, to taste, for oiling the grill grate
- 1 tablespoon salt
- 1 teaspoon ground black pepper
- 1 teaspoon paprika
- 1 teaspoon onion powder
- 1/2 teaspoon cayenne pepper
Directions
Step 1 –Cut 1/2-inch-deep slashes into the skin-side of each chicken half, making two cuts in the breasts, two in the thighs, and one in each leg.
Step 2 –Remove the wing tips from the chicken halves.
Step 3 –Whisk the rice vinegar, 2 tablespoons of the barbeque sauce, and the garlic together in a large bowl.
Step 4 –Place the chicken halves in the bowl and turn to coat.
Step 5 –Arrange the chicken halves in the bottom of the bowl, cut-sides down.
Step 6 –Cover the bowl with plastic wrap and refrigerate for 1 hour.
Step 7 –Preheat a grill to medium-high heat, using the oil to lightly grease the grate.
Step 8 –Transfer the chicken from the bowl and pat it dry with paper towels, discarding any remaining marinade.
Step 9 –Place the chicken halves, skin-side up, on a plate.
Step 10 –Season the chicken with the salt, the pepper, the paprika, the onion powder, and the cayenne pepper.
Step 11 –Cook the chicken, skin-side down, on the grill until grill marks appear, about 3-4 minutes.
Step 12 –Flip the chicken halves and close the grill lid.
Step 13 –Let the chicken cook, basting with the remaining barbeque sauce every 6 minutes, until the chicken is cooked through at 165 degrees F and the juices run clear, about 35 minutes.
Step 14 –Serve.
