For the salad:

  • 2 medium chicken breasts, cooked, shredded or chopped
  • 2 ripe avocados, pitted and diced
  • 1 pound rotini pasta, cooked
  • 1/2 cup red onion, chopped
  • 1 cup cherry tomatoes, halved
  • 1/2 cup fresh basil, chopped
  • salt, to taste
  • pepper, to taste

For the dressing:

  • 1/2 cup white wine vinegar
  • 1 tablespoon Italian seasoning
  • 3/4 cup extra-virgin olive oil
  • salt, to taste
  • pepper, to taste


Step 1 –In a large bowl, add the chicken, the avocado, the pasta, the red onion, the tomatoes, the basil, the salt, and the pepper and toss to combine.

Step 2 –In a jar, combine the white wine vinegar, the Italian seasoning, the oil, the salt, and the pepper, cover, and carefully shake to combine.
